SUNBAKE MA is a Maltogenic Amylase from a selected strain of Bacillus subtilis through fermentation. It  hidrolyses a(1 - 4) glycosidlic bonds of the end of the
starch chain (amylopectin) generating soluble dextrins, leaving primary starch structure intact. These dextrins reduce the retrogradation of the starch improving the freshness and the anti-stalling effect in bread. It is a food grade enzyme typically used to give more crumb softness and elasticity.
