Yeast β-Glucan is derived from Saccharomyces spp. (brewer’s yeast) through a series of processes including cell wall disruption, enzymatic hydrolysis, acid and alkali treatment, separation, purification, drying and packaging. It can be used as a food ingredient and food additive. Yeast β-Glucan is a polysaccharide with a three-dimensional helical structure, mainly composed of a β-1,3-glucan backbone with a small amount of β-1,6-glucan side chains. Its molecular weight is approximately 1,000 kDa, and it is primarily located in the inner layer of the yeast cell wall.
