Glycine
Glycine is an amino acid, a building block for protein with the smallest and simplest structure. Glycine, having a wide range of functions and significant characteristics , is used for various purposes in our daily life.

◆Seasoning:
Glycine has about 70% of the intensity of sweetness as sugar. Generating synergetic effects with mono sodium glutamate (MSG) and nucleotide seasonings, it enhances the taste of umami. Glycine also softens salty, sour and bitter flavours.

◆Shelf life extension/non-preservative technology:
Glycine prevents the growth of bacteria. Specifically, by preventing the growth of heat-resistant bacteria, it retains the quality of food products for much longer. This application is very popular in the Japanese food market.
