Manuka honey is produced from the nectar of the Leptospermum flowers. These flowers have a naturally component that turns into a compound, Methyglyoxal (MGO), that provides unique antimicrobial properties.
MGO is formed in the honey from Manuka nectar, and as the honey ripens, the MGO content can increase.
Manuka honey has a creamy texture and a dark amber colour; it has a special taste, strongly flavoured honey with aromatics woody, nutty characteristics and intense toffee and caramel notes. It has a medium sweetness and a slightly bitter medicinal after taste.
