Maple syrup is made from sap exuded from stems of the genus acer, which starts in february until april and is mainly collected in Canada and US. During thermal evaporation of the sap, several chemical reactions produce specific flavour compounds that define maple syrup.
Flavour and color together are the primary factors determining maple syrup grade ,from light-colored and delicate-flavored to very dark-colored and strong-flavored.
