Chunk size pea-based TVP (textured vegetable protein) is an extruded form of Pea Protein Concentrate, containing at least 55% protein. Commonly applied in vegan and hybrid meat. This product is deal for developing wholesome high protein snacks. The base recipe can be enriched with spices and flavors to create a more complex taste profile. This product is gluten-free.

Functional properties and Applications

During extrusion, shear forces generate a fibrous texture that replicates the bite of meat once rehydrated. TVP demonstrates excellent water-binding and water-holding capacity, which helps to reduce cooking losses and enables it to retain flavor components in hybrid recipes.
