Minced pea-based TVP (textured vegetable
protein) is an extruded form of Pea Protein Concentrate, containing at least
55% protein. It is widely used not only in vegan meat alternatives but also in
the growing segment of hybrid meat products, where it helps reduce costs and
minimize environmental impact of the finished product. The base recipe can be
enriched with spices and flavors to create a more complex taste profile. This
product is gluten-free.
Functional properties and Applications
During extrusion, shear forces generate a
fibrous texture that replicates the bite of meat. TVP demonstrates excellent
water-binding and water-holding capacity, which helps to reduce cooking losses
and enables it to retain flavor components in hybrid recipes. Thanks to
