These allergen-free proteins have an excellent water / fat binding capacity (it can hold up to 30 parts water), which contributes to the global texture of the meat product. Thanks to its neutral taste, its functional properties and solubility, it can be used in many different injected meat products. Applications: bacon, cooked hams (injected and reconstructed), coocked sausages, fermented sausages, Liver sausages/pâté, emulsified meat products.
