Kestose is a type of fructo-oligosaccharide and a functional trisaccharide composed of one sucrose molecule bound to one fructose molecule. It is naturally found in vegetables and fruits, such as onions, asparagus, garlics, tomatoes, and bananas. Kestose is produced by using enzyme that is developed by Samyang Corporation. Kestose is 30% the sweetness of sucrose. It activates the gut immune system, relieving atopic dermatitis.
