L-Arabinose is white crystalline powder with sweet flavor and melting point of 154—158?. It’s easily soluble in water and glycerol, slightly soluble in ethanol and not soluable in aether. It is highly stable under the condition of heat and acid. Solubility: It is easily soluble in water and slightly soluble in ethanol. Its solubility is lower then granulated sugar. Its sweet flavour is similar to granulated sugar, while is 50% the sweetness of granulated sugar. Application: food for diabetics , diet food, healthy functional food and sucrose additive
