data for plant protein concentrates and isolates is currently scarce due to
methodological differences and the constant emergence of new options. This
gap hinders the exploration of many plant proteins for applications in meat,
egg, and dairy alternatives. Our database addresses this issue by offering
comprehensive, standardized characterization data of commercial plant-based
protein ingredients. It covers chemical and nutritional composition,
technofunctional (e.g. gelling, foaming, emulsifying ability) and sensory
properties, as well as sustainability parameters. Our initiative aims to
facilitate direct performance comparisons among various protein ingredients,
while also serving as a valuable tool for targeted product development.
