NATSAN is a natural nitrite alternative for the production of meat and sausage products. It inhibits the growth of undesirable microorganisms such as Listeria, lactic acid bacteria, and aerobic spoilage organisms, while providing a stable, naturally red colour.

NATSAN is celery-free and leaves no detectable nitrite residues in the final product. It is suitable for boiled sausages, raw sausages, cooked cured products, and injection applications, offering a safe and reliable production process without added nitrite.

A fully E-number-free Clean Label version is also available, enabling particularly simple and consumer-friendly ingredient declarations. Manufacturers benefit from stable colour development, improved product safety, and extended shelf life – without compromising process reliability or quality.
