Ama by SUMM
Product description
Ama is a sweet fermented oat ingredient for high-protein bars, cookies and cereals. It lifts perceived sweetness, adds kokumi body and masks the beany, bitter notes of plant protein. In internal bar and cookie trials it enabled around 35% less sugar with liking at or above the full-sugar control, without polyols or sucralose. Use at 3–8%; drinks in development. Certified gluten-free, non-GMO. Clean label: "fermented oat". Pilot volumes available now; commercial supply 2027.
