Product description
Created in the initial stages of chicory processing, the dehydraded chicory powder is very interesting from a techno-functional, nutritional and taste perspective. It improves texture, preservation, taste and nutritional qualities, and it can be used as a substitute fortraditional emulsifiers. It is rich in fibres - greater than 70% - and including more than 50% inulin, a bifidobacterium-enhancing fibre which improves digestive health and intestinal florabalance. For specific needs or issues, using dehydrated chicory powder is recommended in thefollowing products:
• Bakery: adding moisture and softness to the dough, limiting cracking, slowing formation of watercrystals in frozen foods, etc.• Plant-based drinks: roundness, stability after heat treatment
